I think you're looking way too far into this, especially since Leah is the only major female character in the movies (and thus, in the game). It's more likely that they just wanted to show the three main characters balanced out with humorous scenes involving bad guys. The 3 X-wings part was probably a matter of aesthetics, and there's only 1 death star because the second death star doesn't appear in the game (aside, perhaps, for a cut scene) while the first one has its own level. I will admit that the 3 and the 8 are interesting coincidences, but unless you have a source proving it was intentional, I doubt they're more than that.

The choice, number and position of the characters are made to copy the front of some of the Star Wars trilogy merchandice (posters, DVD's ect.) so I think this is probably a coincidence.

Actually the Death Star II has got got it's own level, called 'Into the Death Star' at the end of Episode VI.
